In the heart of Alto Garda Park in Tignale

Our farm is a place where tradition, nature and quality meet. For over 70 years, the Collini family has been dedicated to cattle breeding and, more recently, to the production and direct sale of fresh and aged cheeses, yogurt and ricotta, made with the milk of Alpine Bruna (brown) cows. 
 
Our dairy works exclusively with the fresh milk of the day, coming from the pastures of Tignale. The uncontaminated territory gives the products a full, deep and authentic taste, enriched by the natural aromas of the local forage. We produce cheeses made from 100% cow's milk, with a “zero kilometer production” philosophy, to offer genuine and sustainable quality. 

Alongside our passion for agricultural production, we welcome guests to four apartments nestled in the quiet, hilly landscape. Designed with care and attention to detail, they combine the charm of rural tradition with modern comfort to make your stay unforgettable.

Cheeses

Our cheeses and dairy products are made with the local dairy art and tradition, with an artisanal process that enhances the milk quality without additives or preservatives. From fresh and light ricotta to the tastiest aged cheeses, each product expresses the authentic taste of the Alto Gardesano. Flavored Caciotta cheeses with ingredients such as truffle and lemon add a touch of originality, while semi-cooked and aged cheeses offer strong and versatile flavors, perfect for any occasion. Enjoy a journey into the genuine flavors of Tignale, where quality and tradition meet.

Ricotta
This fresh dairy product is characterized by a soft and velvety consistency, with a sweet and delicate flavor. It is not a cheese, since it is not produced from milk, but from the whey obtained from cheese making. This makes it particularly light in terms of calories, but equally rich in noble proteins and calcium. We produce ricotta using the artisanal method, by straining, according to ancient tradition.
Tignale
Aged cheese with a soft, compact texture, with small holes and ivory color. It has the genuine flavor of milk fresh from the cow and a brief period of salting. The sweet and delicate flavor is typical of Bruna Alpina milk. It is tasty and perfect with any dish, summer or winter.
Tignale with Truffles
Fresh, pasteurized cow’s Caciotta flavored with local truffles. In small portions of 0.600 kg., this soft, light cheese, with pieces of truffle, offers unique and delicate flavor typical of our land. Excellent table cheese but also good as an ingredient in second courses.
Tignale with Lemon
Fresh, pasteurized cow’s Caciotta flavored with the peel and juice of natural local lemons. This is a soft, light cheese with pieces of lemon, a fresh and delicate flavor typical of our land. Excellent table cheese but also good as an ingredient in salads.
Natural Yogurt
Creamy and delicate product. The milk’s natural sweetness, without thickeners, stands alone without added sugars and without skimming the cream. In short, it is as natural as possible. It offers multiple beneficial properties within a diet.
Primo Sale
Fresh, white, rindless cheese with a soft, compact texture. With a short processing time and resting for only a few hours, its genuine taste recalls the flavor of milk fresh from the cow.
Zanzanù
This is a semi-cooked table cheese matured for a minimum of 40 days. The cheese is semi-hard, elastic, compact, with small, scattered holes. It is sweet with a straw-yellow color. With a scent like yogurt, it has a full and pleasant flavor. The golden rind increases in thickness and consistency.
Montecastello
This semi-cooked cheese is named after Tignale’s characteristic monument, the “Sanctuary of Montecastello.” It ripens for a minimum of 6 months. The combination of nature, artisanal processing, and the maturing that refines its qualities makes it extraordinarily digestible, with an unmistakable strong aroma and a straw yellow color. It develops a high natural flavor that allows reducing or eliminating the salt added in cooking.
